One month on skins. Gentle basket press to neutral French oak. 8 months maturation. Bottled with minimal added sulphur <10ppm. Two barrels produced.”

Crushed blue fruit, plum, black cherry and white pepper on the nose. Background of sweet vanilla spice and sundried tomato. Whole bunch ferment lends phenolic structure and taught sour cherry crunch. Fleshy mid palate gives way to fine but firm tannins. Decant and enjoy with food.
