Alex, originally from Auckland, has been working with wine and vines since he left school. Hana was born and raised in Hawke’s Bay and is qualified as a stainless steel engineer. After working for years with wine (Alex avoids the word industry as he doesn’t believe wine and industry can co-exist, one being about time, patience and perfection, the other about efficiency and mass production). Alex has always been working towards trying to produce small production wines without the dependence on industrial additives and modern processing. After years of trials and tribulations and searching for the right vineyards to work with, they arrived at a point we’re finally Alex was confident enough with the wines and how they had been crafted to put both of their names on a bottle and finally show them as their produce.
Saorsa’s wines are produced in the most traditional of ways. All of their fruit is hand picked, juice and wines are handled oxidatively without causing oxidation and faults, inert gases are not used in any part of production, and all transfers are made by gravity where possible. Their wines are then aged in neutral oak to allow natural development while letting the wines show what they really are, not what they can be made to do. To Saorsa, wines are all about texture, all fermentations are wild and ageing is gauged on the individual wine and not rushed. Their wines are bottled unrefined always, and unfiltered where possible with the only addition being sulphur for bottling.
Saorsa Wines aim is to extend their range in the future as they find plots that are fitting. The goal is to work towards getting organic or biodynamic sites to further push individuality in the wines.
All of their wines are small production and unapologetic. A strong, unique and enticing producer you need not miss.
